Ingredients

    • 2 pounds elk stew meat, cut into 1-inch cubes
    • 1/4 cup all-purpose flour
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 3 tablespoons olive oil
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 4 carrots, chopped
    • 4 celery stalks, chopped
    • 4 cups beef broth
    • 1 (14.5-ounce) can of diced tomatoes, undrained
    • 1 teaspoon dried thyme
    • 1/2 teaspoon dried rosemary

Instructions

  1. In a large bowl, toss the elk stew meat with the flour, salt, and pepper.
  2. Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the elk stew meat and cook in batches, turning occasionally, until browned on all sides.
  3. Remove the elk stew meat from the pot and set aside. Add the onion, garlic, carrots, and celery to the pot and cook until softened, about 5 minutes.
  4. Stir in the beef broth, diced tomatoes, thyme, and rosemary. Bring to a simmer, then reduce heat to low and simmer for 1 hour, or until the elk stew meat is tender.
  5. Serve hot with crusty bread.
