Elk Stew Ingredients

    • 2 pounds elk stew meat, cut into 1-inch cubes
    • 1/4 cup all-purpose flour
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 3 tablespoons olive oil
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 4 carrots, chopped
    • 4 celery stalks, chopped
    • 4 cups beef broth
    • 1 (14.5-ounce) can of diced tomatoes, undrained
    • 1 teaspoon dried thyme
    • 1/2 teaspoon dried rosemary

    Instructions

    1. In a large bowl, toss the elk stew meat with the flour, salt, and pepper.
    2. Heat the olive oil in a large Dutch oven or pot over medium-high heat. Add the elk stew meat and cook in batches, turning occasionally, until browned on all sides.
